This Grapefruit & Shrimp Salad is just the perfect size for lunch for one but can easily be made for a crowd, simply multiply the ingredients for a delicious salad all will enjoy.
Grapefruit & Shrimp Salad
Makes: 2 Servings
Ingredients:
1 cups Arugula
1 cups Frisee
1/2 red onion
1 cup pumpkin
1/4 tablespoon ground cumin
1/4 tablespoon cinnamon
1/2 cucumber
1/2 grapefruit
1/2 cup cooked shrimp
Dressing:
1 Tablespoon lemon juice
2 Tablespoon olive oil
1 Tablespoon dijon mustard
Directions:
Mix toether lemon juice, mustard and olive oil in a bowl. Set aside.
Cut the pumpkin in small cubes. Toss with oil and season with salt and pepper then roast in oven on a greased pan until soft.
Cut the red onion into thin strips. Soak in cold water for 10 min.
Cut the cucumber, peel the shrimps and grapefruit.
Mix all the ingredient in a bowl and drizzle with the dressing.
Serve and enjoy! 🙂
