Ingredients:
- 1/4 lb sliced pepperoni
- 1/4 lb sliced Genoa salami
- 1/4 lb sliced ham
- 1/4 lb sliced provolone cheese
- 1/4 cup thinly sliced red onion
- 1/4 cup pepperoncini
- 5 medium tomato slices
- 2 cups shredded iceberg lettuce
- 4 sub rolls
For the Dressing:
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1/8 tsp salt
- Freshly cracked black pepper, to taste
- 1 tsp Italian seasoning
Directions:
- Chop the Filling:
Arrange all sandwich ingredients – meats, cheese, onion, banana peppers, tomatoes, and lettuce – on a large cutting board. Using a sharp knife, chop everything together. Press the knife through the pile, then rotate and chop in the opposite direction. Continue chopping and mixing until everything is finely diced and well combined. Transfer to a large bowl. - Make the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, pepper, and Italian seasoning until emulsified. - Dress the Mixture:
Pour the dressing over the chopped mixture and toss until everything is evenly coated. - Assemble the Sandwiches:
