Ingredients:

  • 2 cups cherry tomatoes, halved
  • ¼ teaspoon salt
  • 1 English cucumber, thickly sliced and quartered
  • ⅓ cup red onion, thinly sliced
  • 1 green bell pepper, chopped
  • 16–20 Kalamata olives, whole
  • 7 oz (200 g) Greek feta cheese, cut into cubes
  • ¼ cup extra virgin olive oil
  • Fresh oregano, preferably Greek oregano (to taste)
  • Optional: splash of red wine vinegar
