Vegan Creamy Broccoli Soup

I was telling you just last week about my new Blendtec Designer 725 blender and shared my recipe for Baby Lasagna.  This week I want to show you how to make a really delicious Vegan Creamy Broccoli soup with The Blendtec Designer 725.

I love the super easy to clean BPA-free 5 sided WildSide+  jar with vented lid – all designed to circulate ingredients more efficiently.  The vented lid really helps when blending hot food such as soup.  I also read in the guide that there is a built in alarm if the blender does still overheat which is nice.  Also included is the Twister jar and “Spectacula” which is designed to blend even your thickest recipes with ease.

Creamy Vegan Broccoli Soup

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 1 onion, finely chopped
  • 2 sticks celery, sliced
  • 2 leeks, sliced
  • 2 medium potatoes, diced
  • 1l vegetable stock
  • 1 head broccoli, roughly chopped with stalk separated from flower.
  • 2 tbsp water
  • Salt and Pepper to taste

Directions:

Heat the oil in a large saucepan over medium-high and add the onions and cook until soft.
 
Add the celery, leek, potato and water, then cover with a lid and allow to sweat for 5 minutes.
 
Pour in the stock, salt and pepper and add broccoli stalks and cook, covered,  for 10 – 15 minutes until the vegetables soften.
Add the rest of the broccoli and cook for another 5 minutes.
 
Carefully transfer to the Wildside+ Jar and set the Blendtec to the Soup pre-set and allow it to work its magic.
 
If you allow it to go to the end of the cycle you will get a perfectly smooth and creamy consistency.
 
I like a little texture with this soup so I reserved part of the batch for a shorter cycle.
 
Now just serve!

  4. Gotta love those brassicas… in anything! This soup sounds like such healthy comfort food. I wonder if you could do this with kale? Maybe it would be too overpowering. Veggies are so fantastic.

  5. That is nice that the Blendtec has a built in alarm for a safety feature in case of over heating.!! This soup sounds really tasty and I do love broccoli soup. Will have to try this one. The one thing I would probably change up is, I would have a bit more pieces of chunky broccoli in mine after I blended it. I like tasting bits and pieces in my soup.
