Apple Cinnamon Bread Variations
Vanilla Glaze: Combine 1 cup powdered sugar, 1-2 Tablespoons milk, and a teaspoon of vanilla extract. Drizzle over the cooled off bread.
Crumble Topping: If desired, combine 1/4 cup all-purpose flour, 2 tbsp brown sugar, and 1/4 tsp ground cinnamon, mix in 2 Tbsp melted butter then sprinkle the crumble over your loaf before baking.
Tips For Making the BEST Apple Cinnamon Bread
- Make sure to slice all the apples in uniform pieces; it will present better and ensure even cooking.
- Allow extra time to have your ingredients at room temperature. They will combine better and create a more uniform batter.
- If your batter does curdle, it is because something wasn’t room temperature. Don’t panic. It will still bake up just fine, although the consistency won’t be quite as good as if you had a smooth batter.
- Make sure you do not over-mix the batter. This will result in a more dense crumb.
- If the inside of your bread is not cooked through that is usually a good sign that you need to keep it in the oven longer. If it is browned on the outside and still uncooked inside, simply cover with aluminum foil and return to the oven until a cake tester inserted into the top of the bread comes out clean.
- Please also remember that ovens vary and so will bake time. Use the included timing as a guideline only as you figure out the best time for your own oven, check at the 50 minute mark with a cake tester and go from there.
- Have patience and let the bread cool. If you cut into it too soon, it will crumble and fall apart when you slice it.
How to Store Apple Cinnamon Bread
To store apple cinnamon bread, allow it to cool completely to room temperature after baking.
Once cooled, you can keep it at room temperature for 2-3 day, or for longer storage, you can refrigerate it for up to a week.
It can also be frozen for up to three months if you’d like to freeze it. When you’re ready to eat, let the frozen bread thaw at room temperature or in the refrigerator.

Apples – Granny smith apples are the best choice for baking in bread. You could also substitute with any other tart apple such as Bramley, Empire, Cortland, or Braeburn. Try mixing two different apples together for even better flavour! Make sure your apples are room temperature before starting so they cook evenly. Two to three medium apples should get you 2 cups of chopped apples.
Sugar – Dark brown sugar will also work here.
Seasoning – Allspice or nutmeg are great substitutions for the cinnamon. To substitute for the pumpkin pie spice use 1/2 teaspoon each of cinnamon, nutmeg, and allspice.
All-purpose flour – Be sure to spoon and level your flour carefully to avoid dense bread.
Baking powder & soda – Leavens the bread.
Salted butter – You can substitute salted butter for this recipe, but in this case add only ⅛ teaspoon salt to your batter.
Sugar – Just plain white sugar here, you can also use caster sugar if you prefer.
Eggs – The eggs should be room temperature as well or the batter may curdle and not combine as nicely.
Milk – Half and half will work as well, as does any other type of milk. Using whole milk or half and half does give better results.
Vanilla – Rum, brandy, and maple syrup extracts are all excellent substitutes.

Ingredients:
- 2 cups Granny Smith apples, peeled and chopped
- ⅓ cup light brown sugar, packed
- 2 teaspoons ground cinnamon
- 1 ½ cups all-purpose flour, spooned and leveled
- 1 ½ teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- ½ cup whole milk, room temperature
- 1 teaspoon vanilla extract
Directions:
Preheat the oven to 350 degrees Fahrenheit. Grease a 9×5 loaf pan or line with parchment paper, and set aside.
Mix the chopped apples with brown sugar and cinnamon in a small bowl, and set aside. (Images 1 & 2)
Whisk together the flour, pumpkin pie spice, baking powder, baking soda, and salt using a medium-sized bowl, and set aside. (Images 3 & 4)
In the bowl of a stand mixer, cream the butter and sugar on medium speed until well combined, about 2 minutes. (Image 5)
Add the eggs one at a time, mixing gently on low speed, (Image 6) until well combined. (Image 7)
Add in your dry ingredients and mix on slow until just combined. (Image 8)
