Heirloom Tomato Tart
This Heirloom Tomato Tart really highlights the beauty and flavour of garden fresh heirloom tomatoes. This is a summer recipe that is sure to be a hit!
Heirloom Tomato Tart
Ingredients:
2 Cups All-Purpose Flour
1 Cup Butter
2 Tbsp Cold Water
1/4 tsp Salt
5 oz goat cheese
1 Tbsp Fresh Thyme
5-6 medium heirloom tomatoes, sliced ½”
2 tsp extra virgin olive oil
¼ cup Parmesan Cheese, shredded
Directions:
Mix together flour and butter until a dough forms.
Add water if needed only and only a little at a time. Salt is optional.
Don’t handle the dough too much but once the butter it combined, roll our your pastry dough to about 13″ and place in pie dish/tart pan. You can go totally rustic or be fancy and scallop the crust.
Preheat oven to 375 degrees.
Using fork tines prick dough all over bottom of the pan.
Bake for 15 Minutes then remove.
In a bowl combine thyme and goat cheese.
Pour into the bottom of the warm tart shell and using a spatula spread herbed cheese to cover.
Arrange tomato slices with edges slightly overlapping each other.
Drizzle olive oil over the tomatoes and sprinkle with Parmesan cheese if desired.
Bake for 20 minutes, if crust starts to get too dark cover just the crust with foil.
If you want the tomatoes to roast further, place under broiler for a few minutes.
Remove and let cool 5 minutes before serving.
