This French Lentil Stew with Sausage is a quick, easy and filling family dinner recipe.
Ingredients:
1 small shallot, diced
1 garlic clove, minced
2 large carrots, peeled and diced
1/2 cup of broccoli, finely chopped (I used a food processor)
1/2 cup of mushrooms (your choice) I used baby portobello
1 cup of sliced sausage
2 cups vegetable broth (or meat)
1lb of steamed French lentils
salt & pepper to taste
Directions:
Saute the shallots and garlic until soft and translucent. Then add all the remaining ingredients and allow to simmer until carrots are cooked through. About 20 minutes or so.
You can serve this as a stew. Or add more broth and turn it into a soup. I love serving this over rice or eating it with some sourdough bread. As an option thinly slice a radish to give it a little spiciness and crunch.

The recipe looks really good, but I am not a big fan of lentil's, maybe I need to try them again!!
