Easter Peeps Cupcakes

These Easter Peeps Cupcakes are just the sweetest Easter cupcakes and they are so easy to make! My kids love the peeps and colourful sanding sugar on a carrot cupcake.

These would be perfect for Easter parties or serving kids at Easter dinner.

Easter Peeps Cupcakes

Ingredients:

Carrot Cake Mix + required ingredients
8 oz cream cheese, softened
1/2 cup butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Peeps
Coloured Sanding Sugar

Directions:

Prepare cupcakes as directed and allow to completely cool.

With a stand mixer, cream together the cream cheese and butter until creamy. Mix in the vanilla,  and then gradually add the powdered sugar and mix until fluffy.

Use a knife to spread frosting evenly over one cupcake at a time.

Roll the frosting into the sanding sugar and press a matching peep onto the top of the cupcake.

Repeat with each cupcake.
