How to Store Left Over Chicken & Sweet Potato Skillet

About the Ingredients for Chicken Quinoa Sweet Potato Skillet
Seasoning – We are using a mixture of cumin, chipotle, oregano, cayenne, salt and pepper to season the skillet. You can use a tablespoon of taco seasoning instead.
Chicken – You will need about 4 boneless, skinless chicken thighs, or 2-3 boneless, skinless chicken breasts.
Garlic – Use fresh minced garlic, only use prepared minced garlic if there no other option, the flavour isn’t as good as fresh.
Sweet potatoes – 3 medium sweet potatoes should get you about 3 cups cubed. You need to parboil the sweet potatoes before adding to the skillet. Boil them for 5-7 minutes, then drain and set aside while you prepare the skillet.
Bell pepper – You should get about a cup chopped. Red is best, I like the sweetness of it but you can use any bell pepper you prefer.
Quinoa – You will need about 1/3 of a cup quinoa to get 1 cup cooked.
Green chiles – You can use fresh hot peppers or canned. If you use fresh, any green chile will work, just keep in mind how much heat you want in the dish. Poblano is a good choice for a milder result, just be sure to de-seed the peppers.
Salsa – I recommend using mild salsa but you can use any heat level you prefer.
Bacon – Thick cut bacon is best so it doesn’t get drowned out by all the other flavours and textures.
Cheese – Sharp cheddar is best but you can use any cheese you like, just avoid pre-shredded cheese as the flavour isn’t the best, and it doesn’t melt as nicely.

How to Make a Chicken Quinoa Sweet Potato Skillet
Yields: 4 Servings | Prep time: 15 Minutes | Cook time: 30 Minutes
Ingredients:
- 1 teaspoon ground cumin
- 1/2 teaspoon chipotle powder
- 1 teaspoon ground oregano
- 1 teaspoon ground cayenne
- Salt to taste
- Black pepper to taste
- 1 pound boneless skinless chicken, diced
- 1 tablespoons olive oil
- 1 teaspoon garlic, minced
- 3 large sweet potatoes, cubed and parboiled
- 1 large red bell pepper, diced
- 1 cup cooked quinoa
- 2 tablespoons green chiles, canned or fresh
- 1/3 cup mild salsa
- 1 pound (about 12 slices) thick cut bacon, chopped and cooked until crispy
- 1 cup cheddar, shredded
- Lime wedges & Cilantro for serving
Directions:
In a small bowl mix together half of the spices, salt, black pepper, and diced chicken thighs.
Heat a large skillet over medium-high heat, adding the oil, then the chicken once the oil is hot. Allow the chicken to cook for 3-4 minutes before stirring the chicken, then allow to cook until the chicken is browned.
Lower the heat to medium and add the garlic to the pan, and cook for 30 seconds.
Add sweet potatoes, bell peppers, the remaining spices, quinoa, salsa, bacon, and chilies. Stir to combine and cook for another 5 minutes until warmed through.
Top with cheese and cover. Once cheese has melted, remove the skillet from the heat.
Serve with a drizzle of squeezed lime juice and freshly chopped cilantro.
