For the other Canadian’s out there, these 7up biscuits turn out very similar to kfc biscuits or popeye’s biscuits. Like any good biscuit, these have a fluffy texture and buttery flavour.

If you want to reach biscuit perfection, follow this easy biscuit recipe and keep in mind these baking basics.
- When measuring out your flour, be sure to use the scoop and sweep method.
- Make sure your butter is as cold as possible.
- When rolling out the biscuits, try to handle the dough as little as possible. Overworking the dough will melt the butter, thus preventing flakey, buttery layers.
- The biscuits should be done baking at 11-12 minutes into the baking time, but the added minute will get them a little more golden.
- If you don’t have a biscuit cutter or cookie cutter in the appropriate size you can use a glass instead. Just dip the rim of the glass into flour to help keep the dough from sticking.
- Once you notice the biscuits turning golden brown, it’s time to remove them from the oven.
- Do not store biscuits until they’ve cooled down all the way before adding them to an airtight container. The condensation will make the biscuits soggy.
What is the secret to excellent biscuits?
Aside from measuring carefully, and not over-working the dough, the secret to making the best biscuits is COLD BUTTER. When working with the dough, the butter often softens before the biscuits go in the oven. You really want to handle the dough as little as possible to help keep the butter cold.
For the coldest butter, try cutting the butter into small pieces and then stick it back in the fridge when ready to incorporate it into the dough.
You may also want to chill the dough before rolling out, this helps keep the butter from melting, and also prevents the dough from getting too sticky to work with.
Why did my dough turn out sticky?
Even if you have carefully measured your ingredients, the dough can still turn out sticky.
If you do find your dough to be too sticky, you can chill the dough in the refrigerator for 15 minutes. Chilled dough tends to be less sticky than room temperature dough, and easier to work with.
You can also lightly flour your own hands to help prevent the dough from sticking.
Try to avoid adding more flour as the biscuits may get too dense.
How to Store Leftover 7-Up Biscuits
Biscuits may be stored in an airtight container or resealable bag for up to 3 days at room temperature.
Stored in the refrigerator they will last up to a week but may not be as soft as when they are stored at room temperature.
To Freeze Leftover Biscuits
You can also store the biscuits in the freezer for longer storage.
Cool your baked biscuits completely and then wrap tightly in plastic wrap or aluminum foil. Then place the wrapped biscuits in an airtight freezer bag and store for up to 3 months.
When ready to enjoy, reheat at 350 degrees Fahrenheit, for 10-15 minutes in an oven safe dish covered with aluminum foil.
Equipment Needed to Make 7-Up Biscuits
You will need mixing bowls, a baking sheet and parchment paper to make these easy biscuits.
A pastry cutter is handy for cutting the butter into the dry ingredients, but you can use two knives instead.
You will also need a round biscuit cutter or cookie cutter 2 to 3 inches in diameter. A glass may work as well.
If you don’t have any appropriately sized cutters, you can make square biscuits instead. Simply place the dough in a baking dish, casserole dish, or even a cast iron skillet, greased with butter. Use a large knife to cut the dough into squares. You may need to adjust the bake time if using this method.
About the Ingredients for 7-Up Biscuits
Flour – Make sure you spoon and level your flour. If you measure incorrectly you may end up with dense waffles. For even easier to make biscuits, swap the flour, baking powder, and salt in even amounts with bisquick.
Baking powder – To leaven your biscuits, make sure it is fresh, or no older than 6 months so it can do it’s best work.
Salt – If you use salted butter then reduce to about 1/4 teaspoon of additional salt.
Butter – Unsalted butter is best, but if all you have on hand is salted, then simply adjust the additional salt. Do not substitute with oil. The butter needs to be really cold.
Shortening – More cold butter may be used instead, but for best results use shortening. The shortening really does a lot for added flakeyness.
Sour cream – Plain or Greek yogourt may be used instead. For best results use full-fat sour cream. This makes the biscuits super soft and moist!
7-Up – You can substitute any lemon-lime soda, such as sprite. Ginger ale works too! Why use 7-Up? It works as a leavening agent, along with the baking soda. The biscuits do not end up taking like citrus either.

Yields: 10-12 biscuits | Prep time: 20 minutes | Bake time: 13 minutes
Ingredients:
- 2 ½ cups all-purpose flour
- 3 ½ teaspoon baking powder
- ¾ teaspoon salt
- ¼ cup cold butter, cubed
- ¼ cup cold shortening, cubed
- ½ cup sour cream
- ⅔ cup 7-Up
Directions:
Preheat the oven to 450°. Line a baking sheet with parchment paper. Set aside.
In a large mixing bowl combine flour, baking powder and salt.
Using a pastry cutter or two forks, cut the butter and shortening in, until the mixture is crumbly in texture.
Add the sour cream and use a rubber spatula to press and mix in.
Once well mixed and coated, add the 7 UP and mix to combine.
Turn the dough out onto a clean, floured surface.
Press the dough out into a 1” thick circle.
Use a biscuit cutter and glass to cut out 10-12 biscuits.
Press the excess dough back together to cut biscuits out of the remaining dough.
Place the biscuits on the prepared baking sheet and place into the preheated oven on the middle rack.
Bake for 13 minutes, until golden. Once baked, remove from the oven and place on a wire cooling rack.
