Well October is basically here and boy did September just zip right by. I don’t know why but I am always surprised by how short September invariably feels.
Along with October comes cooler weather a deeper appreciation for easy, comforting meals. My favourite way to feed my family this time of year is with plenty of slow cooker recipes. I love my slow cooker. Fill it with ingredients. Go off to work, get chores done… live your day and come dinner time your home smells amazing and all you need to do is plate your meal!

Slow Cooker Pineapple Chicken
Ingredients:
1 cup pineapple juice
1/2 cup chicken broth
1/4 cup brown sugar
1/2 cup Ketchup
2 tbsp apple cider vinegar
3 tbsp light soy sauce
3 cloves garlic, minced
1 (14-ounce) can pineapple tidbits, with juice
1/4 Cup Pineapple juice
6 Boneless, Skinless Chicken breasts, cubed
3 tablespoons cornstarch
1 red pepper, diced
1/2 tsp sesame seeds
Directions:
In a 6-qt slow cooker, combine pineapple juice, chicken broth, brown sugar, ketchup, vinegar, soy sauce and garlic.
Stir together until combined.
Mix in chicken and pineapple with reserved juices.
Cover and cook on low heat for 5-6 hours or high for 2-3 hours.
In a small bowl, whisk together 1/4 cup water and cornstarch. Stir in mixture into the slow cooker. Place red pepper in the slow cooker.
Cover and cook on high heat for an additional 30 minutes, or until sauce has thickened.
Serve chicken immediately, garnished with sesame seeds.

I am wanting to know can I use fresh pineapple in place of tinned pineapple. This sounds delicious.

We’ve been using our crock pot more and more. We used to poo poo it but now with two kids in every extra curricular known to man plus three toddlers, it’s nothing short of amazing. I’m gonna talk the kids into letting me try this, this week.
