Mojito’s are one of my favourite cocktails.  I love the combination of mint and the tart flavours of the lime.  This Pomegranate Mojito Mocktail takes things a little further by adding sweet pomegranate juice to the mix making a fancy drink appropriate for kids, pregnant women and non-drinkers.  It’s a really fresh, flavourful drink perfect for any time of year!
 

Pomegranate Mojito Mocktail

1 Serving

 

Ingredients:

1/2 Lime
1/2 Lemon
1 Tbsp of simple syrup (equal parts of boiling water and sugar)
couple springs of Mint
2 oz of 100% Pomegranate juice
4 oz of lemon or lime Sparkling water 
Pomegranate aril for garnish
Ice cubes
 
Directions:
 
Muddle a quartered lime, the tablespoon of the syrup and a mint leaf. 
Then add some ice cubes, the Pomegranate juice and the sparkling water. Stir.
Garnish with a spring of mint, limes and the pomegranate arils.
