These Red Velvet Brownies with Cream Cheese Frosting combine the flavours of red velvet cake with a brownie to create an incredible brownie topped with a delectable cream cheese frosting.
Red Velvet Brownies with Cream Cheese Frosting
Makes – 16 squares
Ingredients
For the Brownies
- 1¼ cups of all-purpose flour
- ½ teaspoon of baking powder
- ¼ teaspoon of salt
- ½ cup of bitter-sweet or semi-sweet chocolate chips
- ½ cup (1 stick) of unsalted butter, diced
- 1 ½ cups of granulated sugar
- 2 teaspoons of vanilla extract
- 2 large eggs
- 1 tablespoon of liquid red food coloring
For the Cream Cheese Frosting
- ½ cup (1 stick) of unsalted butter, softened
- 4 oz. of cream cheese, softened
- 1 teaspoon of vanilla extract
- 2½ cups of powdered or confectioner’s sugar
Instructions
For the Brownies
Preheat oven to 350 degrees. Grease an 8 by 8-inch baking pan and line it with parchment paper. It just makes the brownies easier to remove after they are baked. Keep aside
In a mixing bowl, whisk together flour, baking powder and salt and keep aside.
In a large microwave safe bowl or measuring cup, add the diced butter and chocolate chips and heat mixture in microwave on 50% power, in 30 second intervals, stirring after each interval until melted and smooth. Alternately, you can melt it in a double boiler over stove top.
Add sugar to melted chocolate mixture, and using a rubber spatula, stir to combine.
Crack the two eggs and mix it well with melted chocolate-butter-sugar mixture.
Next, mix in red food coloring and the vanilla extract.
Add the wet mix in to the dry flour mixture and gently fold in until just combined
Pour into prepared baking pan, spread into and even layer.
Bake in preheated oven 35 – 40 minutes until toothpick comes out with a few moist crumbs.
Place on wire rack to cool completely. Cut into squares and frost with the cream cheese frosting. Or you can frost the cooled brownie first and then cut in to square. Decorates with sprinkles. (optional)
For the Cream Cheese Frosting
In the bowl of an electric stand mixer fitted with the paddle attachment, whip together butter and cream cheese on medium-high speed until pale and fluffy, about 4 – 5 minutes.
Add vanilla and powdered sugar and continue to whip until pale and fluffy.
