The DIRTY, LAZY, KETO Dirt Cheap Cookbook is very easy to follow whether you are new to Keto or have been eating Keto for awhile.
I’ve been eating Keto for a few months and already find myself in a rut with “Keto” meals, especially with a family to cook for who eat a standard diet. This cookbook offers many fun new recipes to try without spending a ton of money.
In fact, most of the recipes are great everyday recipes for the whole family. Most can be made using ingredients you likely already have on hand.
It’s a flexible, practical and easy approach to the Keto diet which I think makes it a lot more approachable and easy to maintain long term.
Lunch Line Lasagna Recipe
One of my unique talents is my inability to give up. Don’t laugh, but for years I felt frustrated about my vegetable lasagna recipe. How could I make a healthy lasagna that wasn’t so dang watery? I may have finally solved the riddle! In place of vegetable slices like eggplant or zucchini, I layer slices of lunch meat.

Ingredients:
1 large egg, beaten
2 cups 4% milkfat cottage cheese
3 cups shredded whole milk mozzarella cheese, divided
1 cup grated Parmesan cheese, divided
2 tablespoons olive oil
1⁄4 teaspoon salt
1 (24-ounce) can no-sugar-added pasta sauce, divided
1 (16-ounce) package thinly sliced, oven-roasted deli turkey breast, divided
1 (8-ounce) bag fresh spinach, divided
1 tablespoon finely chopped fresh parsley
Directions:
1 Preheat oven to 375°F. Grease a 9″ × 13″ × 3″ lasagna pan.
2 In a medium bowl, combine egg, cottage cheese, 2 cups mozzarella cheese, 1⁄2 cup Parmesan cheese, olive oil, and salt.
3 Evenly cover bottom of lasagna pan with 1 cup pasta sauce. On top of the sauce, create single layer of sliced turkey, slightly overlapping each piece.
4 Gently spread half of cheese mixture on top of turkey. Then evenly spread half the bag of spinach on top of cheese.
5 Top spinach with an even layer of 1 cup pasta sauce and then create second layer of turkey, slightly overlapping each piece.
6 Top turkey evenly with remaining half of cheese mixture. Spread remaining spinach evenly on top of cheese.
7 Add remaining turkey over spinach, slightly overlapping each piece. Top the turkey layer with remaining pasta sauce.
8 Evenly spread remaining 1 cup mozzarella and 1⁄2 cup Parmesan on top of pasta sauce. Sprinkle parsley over top of lasagna.
9 Cover with foil and bake 45 minutes. Let cool 30 minutes covered, then serve.
TIPS & OPTIONS
I’ve been known to use parsley leaves to spell out the letters “D L K” on the top of the lasagna like some kind of birthday cake. Let’s celebrate. You’re eating lasagna and losing weight for cryin’ out loud!

This recipe was good but "no watery residue" was an absolute lie. It was actually lasagna soup. The next day, it had set up, but then again, so does traditional lasagna. I'll definitely make it again because of the flavor and ease, but next time, I'll eat it as leftovers.
