Do you love hearty soup? Then, I have the perfect recipe for you! It’s a low carb and keto friendly take on the Olive Garden favourite “Zuppa Toscana”. This is keto diet comfort food at its best.

I’ve been obsessed with this soup all year, I started with an Instant Pot version back at the start of the year and have been making it weekly since. Yes, even through the summer. It’s that good.

The first thing I did was ditch the Instant Pot. I love my Instant Pot, but it just seemed silly to lug it out for what is a really easy and quick to make soup on the stove top. For the same reason I would skip the slow cooker.

I also really hate soup recipes that yield only enough soup for 4 servings.

Honestly, get out of here with that, I love cooking but I don’t want to be cooking new meals every night.

So this recipe is a stove top, big batch version of low carb, keto friendly Tuscan soup. I hope you love it as much as my family does!

What is Zuppa Toscana?

Zuppa Toscana, meaning “Tuscan Soup,” is a very American derivative, popularized by the Olive Garden, of a more traditional soup from the Tuscany region of Italy.

The original recipe from which Zuppa Toscana is derived, which is known as Minestra di Pane (meaning bread soup) is a thick, rich soup made with bread and sausage and seasoned with garlic and olive oil. What the Olive Garden calls “Zuppa Toscana” does share certain traits with its Italian sister soup, but it also has several differences.

While not traditional, Zuppa Toscana is still a very tasty soup. It typically consists of rich and spicy Italian sausage in a creamy broth with potatoes, bacon, and fresh kale.

This low carb soup version skips the potatoes, cannellini beans, and bacon and brings in sundried tomatoes for satisfying blend of flavours. We are just making some easy swaps to lower the carbs so everyone can enjoy this tasty soup.

What can you Serve with Low Carb Tuscan Soup?

This Zuppa Toscana recipe is very hearty, and a whole meal onto it’s on but if you’re looking for an accompaniment for your soup, a salad would be perfect.

Some crusty bread or rolls would make a nice addition as well for anyone not on a low carb diet, but not necessary in my opinion.

How to Store Tuscan Soup

Store Tuscan Soup in the refrigerator in an airtight container . Cooked soup lasts for three to five days in the refrigerator.

This big batch soup is a good choice for meal plans. Simply store as individual servings you can grab and heat up throughout the week.

If you keep your Tuscan soup in a sealed container, then it should last for three to five days in the refrigerator.

Like other creamy soups, this soup should not be frozen, because this will cause the ingredients to separate.

About the Ingredients for Low Carb Zuppa Toscana

Sausage – Swap with mild Italian sausage if you want to cut down on the heat. You can also purchase sausage meat from the butcher that is not in casings.

Onion – White or yellow onion.

Garlic – 6 cloves minimum guys.

Oregano – Can also use fresh.

Sun-dried tomatoes – Ok so diced tomato would have been a better low carb choice here, but the sundried tomatoes offer a more intense sweet-tart flavour is really needed with how heavy the other ingredients are. Plus with only approximately 7g of net carbs in a serving, you will still be left with more than enough carbs to get through your other meals comfortably.

Salt & Pepper – Balances all the flavours, add to taste.

Chicken Broth – I use regular chicken broth, but you can use sodium reduced if that is your thing.

Kale – Spinach is a good substitute for these leafy greens if needed.

Cream – If you don’t have heavy cream, then light cream or half and half works.

Bacon – You will notice there is no bacon in my version. Bacon is just fine for Keto and you can certainly add some to my version, I just can’t with flavourless chewy bacon. Opt instead to sprinkle it over with crispy bacon. The sausage adds more than enough meaty flavour to the broth, you won’t miss the bacon in the actual soup.

How to Make a Big Batch of Keto Tuscan Soup

Yields: 12 Servings | Prep time: 10 Minutes | Cook time: 35 Mins

Ingredients:

  • 3 lb (1.4 kg) Hot Italian Sausage, casings removed
  • 1 Large Onion, chopped,
  • 6 Cloves Garlic, minced
  • 1 Tbsp Dried Oregano
  • 1 Cup Sun-dried tomatoes, drained and sliced
  • Salt & Pepper to taste
  • 12 Cups Chicken Broth
  • 1 Bunch Kale, de-stemmed and sliced thin
  • 1 Cup Heavy whipping cream

Directions:

In a large soup pot or dutch oven (5.5 qt), over medium-high heat, add Italian sausage, breaking it up with your spatula and sauté until cooked through.

Drain excess fat then add the onion and cook until softened. Stir in garlic, oregano, sun dried tomatoes, salt and pepper and saute one minute.

Pour in broth, bring to just a boil and then reduce to a simmer. Simmer for 15 minutes then add the chopped kale and cook until the kale starts to wilt.

Stir in cream and bring back to a simmer.

Season to taste with salt and black pepper then remove from heat.

Serve with grated parmesan cheese and red pepper flakes.
