Equipment Needed for This Salad

You will only need a large serving bowl, a cutting board, a sharp knife, and a cutting board. If you are preparing the dressing as well, you will need a small bowl and a whisk.

Ingredients for Cucumber and Sweet Pepper Salad

Peppers – You will want to use about 8 mini sweet peppers for this salad, you could also use a couple bell peppers instead, but the sweet peppers have really great concentrated flavour that will be missed.

Cucumber – You can use either 4 persian cucumbers or one small English cucumber.

Dressing – You can use homemade or store bought sesame ginger dressing. I re-used the sesame ginger dressing from my Asian chicken salad recipe, it’s easy to make and tastes delicious!

Chili oil – Add the chili oil to taste, use less for just a bit of zing, more if you want some heat, or just omit if you want to keep the salad mild.

Seasoning – Adds a nutty crunch and extra flavour to the salad.

How to Make Cucumber and Sweet Pepper Salad

Ingredients:

For the Sesame Ginger Dressing:

  • ¼ cup extra virgin olive oil
  • ½ tablespoons rice vinegar
  • ½ tablespoon sesame oil
  • 1 tablespoon soya sauce
  • ½ tablespoon ginger, grated
  • 1½ tablespoons honey

For the Salad:

  • 7-8 mini sweet bell peppers (mixed colors), sliced into rings
  • 4 Persian cucumbers, sliced
  • ¼ cup sesame ginger dressing
  • 1-2 tablespoons chili oil (depending on how much heat you prefer)
  • 2-3 teaspoons everything but the bagel seasoning

Directions:

In a small bowl, whisk together the dressing ingredients.

Add all salad ingredients to a mixing or serving bowl and toss to combine.

Adjust chili oil and bagel seasoning to taste.

Serve immediately or chill until ready to serve. Enjoy!
