   15 Minute White Bean and Ham Soup with Kale

Last week I shared with you my recipe for 15 Minute Sweet and Sour Pork using Maple Leaf® Country Kitchen® Smoked Ham

I love finding new quick and easy dinner ideas and this 15 Minute White Bean and Ham Soup with Kale caught my eye on AppEhtite.ca.  I did tweak it a bit to suit my family’s tastes a bit more and it came out amazing.  I particularly like the chopped up Kale in it, what a great idea! 

I was surprised by how much flavour the soup has despite the quick cook time.  Using the  Schneiders® Old Fashioned® 25% Less Sodium Smoked Ham really makes things so much easier.

 15 Minute White Bean and Ham Soup with Kale

15 Minute White Bean and Ham Soup with Kale

Ingredients:
1 tbsp Olive oil
1 Onion, diced
2 Carrot, diced
2 Stalk celery, diced
2 Cloves garlic, minced
1 (800 g) Schneiders® Old Fashioned® 25% Less Sodium Smoked Ham, cut into 1” (2.5 cm) pieces
7 cups (1.75 L) Chicken broth
1 can (19 oz) Cannellini beans or white kidney beans, rinsed and drained
1/2 tsp (2 mL) Chopped fresh thyme or rosemary
1 tsp Dried Oregano
Pepper to taste
2 cups (500 mL) Chopped fresh kale leaves

 

Directions:

Heat olive oil in a large pot over medium heat.

Add onion, carrot, and celery and cook for 4-5 minutes.

Add garlic and ham and continue to cook for another 1-2 minutes.

Pour in broth, beans and herbs and bring to a boil then reduce heat and simmer for 5 minutes.

Season to taste with pepper then stir in kale and cook until wilted.

Serve hot.

White Bean and Ham Soup with Kale

  • 1 can Cannellini beans or white kidney beans, 19 oz, rinsed and drained
  • 1/2 tsp Chopped fresh thyme or rosemary, 2 mL
  • 1 tsp Dried Oregano
  • Pepper to taste
  • 2 cups Chopped fresh kale leaves, 500 mL

  2. That is a great recipe. I make a very similar soup, but instead of ham I use mild Italian sausage for a bit of a kick.

  6. I find Kale to be one of the most misunderstood veggies of the brassica queendom. This soup looks like a delicious way to use tons of it! I have a taste for spice, so if it were me, I might try adding a bit of Dijon mustard and hot sauce. Yum!
