Apple Cider Cupcakes

Makes 24 Cupcakes

Ingredients:

1 Box Spice Cake Mix (515g)
1 1/3 Cups Apple Cider
1/3 Cup Vegetable Oil
3 Large Eggs
1/2 Cup Butter, Softened
1/3 Cup Apple Cider
4 Cups Icing Sugar
1/2 Cup Walnuts, Chopped

 

Directions:

Preheat oven to 350 degrees F. Line two standard muffin tins with baking cups.

Mix together cake mix, 1 1/3 cups apple cider, oil and eggs with an electric mixer on low until combined then on medium speed for two minutes.

Spoon batter evenly into prepared muffin tins, filling each cup about 3/4 full.

Bake 12-14 minutes or until a toothpick inserted into center comes out clean.

Cool in pans for 10 minutes and then remove to a wire rack to finish cooling off.

Cream together the  butter and remaining apple cider with an electric mixer on low until well combined. Gradually beat in powdered sugar until smooth and creamy.

Frost cupcakes as desired and garnish with chopped walnuts.

I have never baked using apple cider before. It must add a slightly less sweet note to these cupcakes.
