These Spring Flower Pot Desserts are a darling dessert for spring! Kids will love making, and eating them with mom, they are a fun Easter party treat for kids too.
Spring Flower Pot Desserts
Yield 12
Ingredients:
For the Cups
2 ½ cups graham cracker crumbs
14 tablespoons butter, melted
1 cup granulated sugar
6 drops red food colouring
For the Filling
3 ounce package chocolate pudding mix
2 2/3 cup milk, cold
For the Topping
1 cup sweetened coconut flakes
8 drops green food dye
Directions:
Preheat oven to 350 degrees F.
Add graham cracker crumbs, butter, and sugar to a bowl and mix until combined.
Add food coloring and mix until desired color.
Press crumb mixture into mini popover pan, working upward with fingers building a cup shape.
Bake for 12 minutes or until just beginning to brown. -slight sinking of the walls is normal, use a spoon to correct and continue baking.
Allow to cool completely in pan.
In a large mixing bowl, beat milk and pudding mixture together until smooth.
Scoop pudding into cups.
In a small mixing bowl, using a fork, mix coconut and food dye, until desired shade of green.
Sprinkle coconut mixture on top of pudding.
Cut lollipop stems to desired height.
Place lollipops and allow 5 minutes to set.
