I find Roma tomatoes are great as far as preparation since they are meatier with less seeds and less mess. Cherry tomatoes are perfect in the winter if you live in the north as they have bright flavour all year long.

Dicing – It’s important to finely chop the ingredients into small, even pieces so that all of the flavours are thoroughly mixed together while eating.

Seasoning – Finally, it’s important to adjust the seasoning according to your taste. Add more lime juice or salt as desired.

How to Serve Salsa Fresca

This is a versatile salsa that can be enjoyed in many ways.

It’s great served as a dip with tortilla chips or as an accompaniment to tacos, burritos and enchiladas. You can also spoon it over grilled meats, tacos or fish dishes.

It’s also delicious when used as a topping for eggs, omelets or a bowl of rice and beans. Pico de gallo is also popular in salads and can be served with grilled vegetables for a simple side dish.

How to Store Leftover Pico de Gallo

Pico de gallo is best when enjoyed on the same day it is prepared. However, if you have any leftovers after preparing this delicious Mexican salsa, there are some tips to help store it properly.

The most important tip for storing leftover pico de gallo is to make sure it’s stored in an airtight container and refrigerated right away. This will prevent the mixture from spoiling or becoming overly soggy. You can store pico de gallo in the refrigerator for up to three days.

You may find that the flavour isn’t there after storing. If this is the case, a squeeze of fresh lime juice right before serving can refresh the flavour.

I do not recommend freezing pico de gallo. The texture, flavor and color may be affected by freezing, which will destroy the fresh taste of this salsa.

About the Ingredients for Pico de Gallo

Onion – White onions are best for pico de gallo. It has a sharper flavour than yellow onion and is quite a bit more crisp. I like that the onion flavour doesn’t linger in your mouth as long with white onions. If you want to tame the onion flavour a bit you can soak the diced onion in cold water.

Jalapeno – The one Jalapeno adds just a hint of spice. For a milder Pico de gallo you can omit completely, although I think the flavour is pretty mild as it is. For a spicier Pico, include the seeds or use two jalapenos.

Lime – You can use bottled lime juice if you like, but fresh lime juice provides the best flavour.

Salt – Enhances all the flavours. After combining be sure to taste and adjust the amount as needed.

Tomatoes – Use ripe, red tomatoes for this tomato salsa. Any variety will do as long as they have great texture and flavour. Be sure to remove the core and seeds before dicing. It is important to use fresh tomatoes for authentic pico. Do not use canned tomatoes.

Cilantro – The amount of cilantro used is personal, and depends on whether you like it or not. Feel free to use less or more. I would say a half cup finely chopped fresh cilantro is good middle ground. If you dislike cilantro try chopping it into larger pieces so you can pick it out of your own serving, and let everyone else enjoy the pico as it is meant to be.

  • 1 cup white onion, finely chopped
  • 1 medium jalapeño, seeded and diced

  • 4 large / 8 small tomatoes, seeded and finely chopped
  • 1/2 cup fresh cilantro, finely chopped

Directions:

Add the tomatoes and cilantro, then stir to combine.

Allow to marinate for at least 15 minutes in the refrigerator prior to serving.
