Spaghetti – You can use fettucini, angel hair, or linguini noodles for this dish if you prefer.

Ground beef – You can use ground chicken or turkey in place of the ground beef. Another option is to use flank steak.

Sesame oil – Only sesame oil will do. Measure carefully, it can easily take over a dish.

Garlic cloves – Fresh garlic is best, if you need a shortcut you can use garlic paste. Avoid garlic powder.

Tomato paste – Adds body and a little umami to the sauce.

Soy sauce – Be sure to use low sodium soy sauce as hoisin sauce can be quite salty.

Honey – In place of honey, you can use light brown sugar.

Beef broth – Again, ensure that you use low sodium broth only.

Hoisin sauce – There isn’t really a good substitute for hoisin sauce, it has a unique texture and flavour so substituting would alter the sauce completely. If you absolutely must, oyster sauce or garlic teriyaki sauce would work.

Ginger – You use must fresh ginger only. Ground ginger absolutely will not work well.

Red pepper flakes – Adds a bit of a bite but not a lot of heat to the dish, the spiciness of the dish should be tolerated by anyone.

Cornstarch – Thickens the sauce.

Green onions – Added at the end to maximise on their flavour.

Sesame seeds – Adds a little texture.

How to Make Ground Beef Mongolian Noodles

Yields: 6 Servings | Prep time: 10 minutes | Cook time: 20 minutes

Ingredients:

  • 12 ounces spaghetti
  • ¼ cup pasta water reserved
  • 2 tablespoons water
  • 1 tablespoon cornstarch
  • 1 pound extra lean ground beef (93% lean)
  • 1 tablespoon sesame oil
  • 5 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon ginger, minced
  • ½ cup low-sodium soy sauce
  • ¼ cup honey 
  • ¼ cup low-sodium beef broth
  • 3 tablespoons hoisin sauce
  • ½ teaspoon red pepper flakes
  • ½ teaspoon black pepper
  • ⅛ teaspoon coarse kosher salt
  • 3 green onions, chopped (green ends)
  • 1 tablespoon sesame seeds

Directions:

Bring a large pot of water to a boil and cook the spaghetti according to the directions. Approximately 10 minutes. Reserve 1/4 cup of pasta water. Drain the pasta.

Make a cornstarch slurry by mixing the 2 tablespoons water and cornstarch together. Set aside. (Images 1 & 2)
