Rainbow Sprinkle Cupcakes

Yields: 12 decorated cupcakes

Ingredients:

One dozen of your favorite vanilla cupcakes, completely cool to the touch (we used a cake mix – which usually yield 24 cupcakes. So cut the recipe in half and prepared!)
1 stick butter, softened
2 cups confectioners’ sugar
2-3 tbsp milk
2 drops blue gel food coloring
1-2 tbsp of each of the following sprinkles: red, yellow, green, blue, purple

 

Directions:

Start by making the buttercream. In a large bowl, beat together butter, confectioners’ sugar and milk with an electric mixer. Start on low and gradually increase the speed to high.

 

Once the ingredients are well-combined and form semi-stiff peaks, the buttercream is ready.

 

Scoop half of your buttercream into a piping bag with a round icing tip attached. Set aside.

 

 

Color the rest of the buttercream with blue gel food coloring.

 

Frost each cupcake with blue buttercream using an offset spatula.

 

Time to make the rainbow: add sprinkles starting at the top of your cupcake and in an arch shape, spread the red sprinkles then follow with yellow, then green, blue and purple.

 

 

 

With white buttercream, frost out clouds at the end of the rainbow.

Serve and enjoy!
