I absolutely adore pineapple, it is one of my most favourite fruits.

That sweet tangy flavour is just addictive.

This is my mom’s Pineapple Delight recipe, one of my all time favourite easy recipes. I would often ask for this in lieu of birthday cake. It’s just one of those family favourites that usually made an appearance at family gatherings..

It’s super rich and sweet with just a wonderful combination of flavours between a crust of graham crackers and butter, rich buttercream filling, real whipped cream all topped off with the the tangy sweetness of pineapple and another sprinkle of graham cracker crumbs. Swoon.

This vintage pineapple delight dessert does not use cool whip or cream cheese. Instead real eggs, real whip cream, real butter and lots of it! It’s such a great recipe!

It’s an easy dessert that is perfect for serving over the hot summer months since it requires no baking. It also holds up well when chilled, it’s a great make-ahead dessert, just store it in an airtight container!

Pineapple Lush Vs. Pineapple Delight Vs. Pinapple Lasagna

A pineapple lush or pineapple lasagna is just another name for pineapple delight. There is no real difference.

There is, however, a huge difference between my Pinapple delight recipe and the typical pineapple lush you will find out in the wild of the internets.

This is a vintage recipe that calls for real ingredients. So you will find here butter, real whipped cream and eggs. There is no cream cheese layer, and no baking required.

It results in a rich and wonderful fruity dessert with a simple cookie crust – it honestly makes whipped topping desserts pale in comparison. This is just the dreamiest pineapple dessert ever.

Ingredients for the Pineapple Lush Dessert

This no bake dessert is made with only a few simple ingredients:

Crumbs: Use graham cracker crumbs. Either make your own or buy them.

Butter: I use salted butter for this recipe in both the crust and the second layer. It’s the secret to a great buttery graham cracker crust!

Powdered Sugar: Plain old icing, powdered or confectioners’ sugar, depending on what you call it where you live.

Eggs: Use clean, fresh and refrigerated eggs. Read on for more information.

Cream: I use real whipping cream that I whip myself. You can certainly use whipped topping but in all my years I have never had it with anything but real whipping cream so cannot guarantee good results.

Pineapple: I’ve always used canned crushed pineapple with the juice drained. I am sure you could also finely chop up some fresh pineapple too.

Is it safe to eat Raw Eggs in this Pineapple Dessert?

Yes! As long as you take basic precautions, it can be mostly safe to eat raw eggs.

With eggs, there is always a small risk of Salmonella bacteria being present on the eggshell exterior. The risk of getting sick from this is minimal if you use fresh, refrigerated and clean eggs.

This pineapple delight dish should be either consumed immediately after preparing it or it should be stored safely in the refrigerator. It should never be left out to warm up.

This is because bacteria such as Salmonella need time to grow, and they need time to grow in the right conditions. This means it really does matter how quickly you eat the food containing raw eggs and whether or not it gets refrigerated properly.

People with vulnerabilities such as those with compromised immune systems – including pregnant women, and elderly people – should avoid foods that contain raw eggs.

If this is a concern for you, substitute the two raw eggs with the equivalent pasteurized egg products, which are safe for even vulnerable people to consume raw.

How to Make Pineapple Delight

Ingredients:

  • 2 Cups Graham Cracker Crumbs
  • 1/4  Cup Butter, melted
  • 1 1/2 Cups Powdered Sugar
  • 1/2 Cup butter, softened
  • 2 Eggs
  • 10 oz Whipping Cream
  • 1 tsp Vanilla Extract
  • 20 oz Can Pineapple, Crushed
Ingredients for Pineapple Delight

Directions:

Cream together sugar and butter using an electric mixer.

Add 1 egg at a time and beat. Set aside.

Combine graham cracker crumbs with the melted butter in the bottom of an 8″x9″ baking dish, reserving 1/4 cup of the crumbs for sprinkling. Press the graham cracker mixture into bottom of the dish.

Spread the butter and sugar mixture over the graham crumbs.

Beat the cream with your stand mixer until stiff peaks form, then fold in vanilla extract.

Then spread the whipped cream over the other layers and add a layer of pineapple.

Sprinkle reserved graham cracker crumbs over the top.

Chill and serve.

  • 1 1/2 Cups Powdered Sugar
  • 1/2 Cup Butter, Softened
  • 2 Eggs
  • 10 oz Whipped Cream
  • 2 Cups Graham Cracker Crumbs
  • 20 oz Can Pineapple, Crushed
  • 1/4 cup Butter, Melted

Instructions

  1. Cream together sugar and butter.
  2. Add 1 egg at a time and beat.
  3. Place a layer of graham cracker crumbs in the bottom of an 8"x9" dish, reserving some for sprinkling. Stir in melted butter an press into bottom of the dish.
  4. Spread butter mixture over graham crumbs then spread with whipped cream and add a layer of pineapple.
  5. Sprinkle reserved graham cracker crumbs over the top.
  6. Chill.

I haven't tried that, I think the pineapple juice might curdle the butter mixture but I could be wrong.

I have an avocado brownie recipe that is diabetic friendly if you swap the honey for stevia or liquid monk fruit. I am not diabetic so most of my desserts are treats, and not geared towards being healthy. This brownie is made without white flour though so it's perfect for diabetics or anyone following the Keto diet.

Nope. If you are concerned with Salmonella you can always used pasteurized eggs.
