Peanut Butter Frosting and 3 Cupcakes

in Recipe


This recipe for Peanut Butter Frosting is probably the most amazing tasting frosting I’ve ever had.  It makes enough for 3 Cups of Frosting which should be good for 2 batches of 24 cupcakes.  What I love most about peanut butter frosting is all the amazing cupcakes you can pair it with like Peanut Butter and & Jelly cupcakes!  (See below for more ideas.)

Peanut Butter Frosting

Ingredients

1/2 Cup Unsalted Butter, Softened
1/2 Cup Creamy Peanut Butter
2 Cups Powdered Sugar, Sifted
1/2 Tsp Vanilla
4 TBsp Milk

Directions

Mix Butter and Peanut Butter in a medium sized bowl until smooth.  (If using an electric mixer set to medium speed.)

Slowly add Powdered Sugar until blended and then add Vanilla.


Add Milk and mix until smooth (about 2 minutes).

So now that you have some fabulous Peanut Butter Frosting you need some equally amazing cupcakes to pair it with.

One of my favourite combinations is to pair this Peanut Butter Frosting with Jam Filled Cupcakes.  Yum!

Peanut Butter & Jelly Cupcakes

Ingredients

1 package Yellow Cake Mix (Plus Ingredients needed to prepare mix)
OR  Your Favourite Recipe for Yellow Cake
Jelly or Jam, Your Favourite Flavour 
Peanut Butter Frosting (See Above)

Pastry Bag fitted with Small round tip (optional)

Directions

Prepare cupcakes as directed then allow to cool completely.

Fill Pastry bag with jam or jelly and insert tip into top of cupcakes and squeeze gently to fill centre of cupcake until you feel resistance.)

Alternatively, if you do not have a pastry bag, cut out a small cylinder from the top of the cupcakes and carefully spoon in.

Pipe or carefully spread Peanut Butter Frosting onto cupcakes.

The kids will go crazy for Peanut Butter and Banana Cupcakes too!

Peanut Butter and Banana Cupcakes

Ingredients

1/2 Cup Butter
1 Cup Sugar
1 Cup Bananas, Mashed (About two medium sized bananas)
1 Egg
1.5 Cup Flour 
1 tsp Baking Soda
1/2 tsp Salt
1 tsp Vanilla 

Directions

Preheat Oven to 350 degrees

Cream Butter and Sugar, then mix in Bananas and Egg.

Slowly add sifted Flour, Baking Soda and Salt and mix until smooth then add Vanilla and mix 30 seconds further.

Fill lined Cupcake tins 1/3 full.

Bake for 20-22 mins 

Pipe or Spread Peanut Butter Frosting over cupcakes once completely cooled. The Bacon Lover will go “bananas” over bacon crumpled over these cupcakes!
