Shakshouka (Spiced North African Eggs)
extra virgin olive oil
freshly ground black pepper
Large Red pepper
Pre-heat oven to 375 degrees F.
Saute onion in evoo until translucent in an ovenproof skillet over medium heat.
Add garlic and cook for 1 minute.
Add spinach, cumin, turmeric, salt and pepper, and green chili and saute for another minute.
Add the diced tomatoes and red pepper and cook until the sauce thickens, reduce heat.
Carefully break eggs one by one into the skillet, spacing them out evenly.
Place the pan in the oven and bake for 5 minutes or until eggs are done to your preference.
Serve with flatbread and enjoy!
