Peanut Butter & Jelly Cupcakes
  • 1 package Yellow Cake Mix Plus Ingredients needed to prepare mix
  • 1 Cup Strawberry Jelly
  • Peanut Butter Frosting Ingredients:
  • 1/2 Cup Unsalted Butter Softened
  • 3/4 Cup Creamy Peanut Butter
  • 2 Cups Powdered Sugar Sifted
  • 1/2 Tsp Vanilla
  • 4 TBsp Cream
  1. Prepare cupcakes as directed then allow to cool completely.
  2. Fill a pastry bag fitted with a medium round tip with jam jelly and insert tip into the top of the cupcakes and squeeze gently to fill centre of cupcake.
  3. Alternatively, if you do not have a pastry bag, use a cupcake corer or knife to cut out a small cylinder from the top of the cupcakes and carefully spoon in the jelly.
  4. Cream together Butter and Peanut Butter in a medium sized bowl until smooth.
  5. Slowly add Powdered Sugar until mixed in and then add Vanilla.
  6. Add Milk a tbsp at a time and mix until light and fluffy, about 2 minutes.
  7. Pipe Peanut Butter Frosting onto cupcakes.
