Garlic Lemon Pasta with Roasted Shrimp
  • 21-25 Large Shrimp peeled and deveined
  • 1 Tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/2 tsp black pepper
  • 450 g Fettuccine
  • 1/4 Cup Olive Oil
  • 6 Large Cloves of Garlic minced
  • 2 Lemons Zested and Juiced
  • 1 tsp red pepper flakes
  • 1/4 Cup Extra Virgin Olive Oil
  1. Preheat the oven to 400 degrees F.
  2. Toss the shrimp on a sheet pan with 1 tbsp olive oil, salt and pepper and spread out in a single layer. Roast in oven for 6-8 minutes or until they're pink and cooked.
  3. Meanwhile, cook the pasta in salted water until al dente, about 9 minute then drain the pasta and set aside.
  4. In the pasta pot, without rinsing it out, add the olive oil, lemon juice, lemon zest, red pepper flakes and garlic. Saute for about 1 minute over medium heat. Toss in the fettuccine until evenly coated. Add the shrimp and serve hot.
