German Chocolate Cupcakes
  • 1 Box Chocolate Cake Mix + ingredients to prepare
  • 1 Can evaporated Milk
  • 1/2 Cup Butter
  • 4 Egg Yolks Slightly beaten
  • 3/4 Cup Granulated Sugar
  • 1/4 Cup Brown Sugar
  • 2 Cups shredded Coconut
  • 1 cup chopped pecans
  • 3 Oz Semisweet Chocolate pieces
  1. Prepare cupcakes according to the instructions then allow to cool completely.
  2. In a medium saucepan mix the evaporated milk, butter, egg yolks, granulated sugar and brown sugar over nedium-low heat, stirring constantly until slightly thickened (about 8 minutes.)
  3. Stir in coconut and pecans then remove from the heat.
  4. Allow the miture to cool and thicken further, stirring occasionally. If possible, cool in the refrigerator.
  5. Once cooled, spoon over each cupcake.
  6. Next, in a small microwaveable bowl, microwave the chocolate for 30 seconds and stir. Repeat with 15 second intervals until chocolate is melted and smooth.
  7. Drizzle chocolate over cupcakes.
