Creamy Vegan Broccoli Soup
extra virgin olive oil
roughly chopped with stalk separated from flower.
Salt and Pepper to taste
Heat the oil in a large saucepan over medium-high and add the onions and cook until soft.
Add the celery, leek, and potato water, then cover with a lid and allow to sweat for 5 minutes.
Pour in the stock, salt and pepper and add broccoli stalks and cook, covered, for 10 – 15 minutes until the vegetables soften.
Add the rest of the broccoli and cook for another 5 minutes.
Carefully transfer to the Wildside+ Jar and set the Blendtec to the Soup pre-set and allow it to work its magic.
If you allow it to go to the end of the cycle you will get a perfectly smooth and creamy consistency.
I like a little texture with this soup so I reserved part of the batch for a shorter cycle.
Now just serve!
