Creamy Vegan Broccoli Soup
  • 2 tbsp extra virgin olive oil
  • 1 onion finely chopped
  • 2 sticks celery sliced
  • 2 leeks sliced
  • 2 medium potatoes diced
  • 1 l vegetable stock
  • 1 head broccoli roughly chopped with stalk separated from flower.
  • 2 tbsp water
  • Salt and Pepper to taste
  1. Heat the oil in a large saucepan over medium-high and add the onions and cook until soft.
  2. Add the celery, leek, and potato water, then cover with a lid and allow to sweat for 5 minutes.
  3. Pour in the stock, salt and pepper and add broccoli stalks and cook, covered, for 10 – 15 minutes until the vegetables soften.
  4. Add the rest of the broccoli and cook for another 5 minutes.
  5. Carefully transfer to the Wildside+ Jar and set the Blendtec to the Soup pre-set and allow it to work its magic.
  6. If you allow it to go to the end of the cycle you will get a perfectly smooth and creamy consistency.
  7. I like a little texture with this soup so I reserved part of the batch for a shorter cycle.
  8. Now just serve!
