15 Minute Sweet and Sour Pork
Ingredients
  • 1 tbsp Olive oil
  • 1 Maple Leaf® Country Kitchen® Smoked Ham cut into 1" cubes
  • 2 Red peppers cut into 1” pieces
  • 1 medium onion chopped
  • 1 Can pineapple chunks 8 ounce, juice reserved
  • 1 cup water
  • 1/4 tsp salt
  • 3/4 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1 tbsp soy sauce
  • 2 Tbsp cornstarch
Instructions
  1. Whisk together cornstarch with soy sauce in a medium sized bowl until smooth then whisk in water, salt, brown sugar, vinegar, and ketchup then set aside.
  2. Heat oil in a wok over medium-high heat.
  3. Stir-fry ham, red pepper and onion until vegetables are just tender crisp.
  4. Add pineapple chunks and cook for 2 minutes more.
  5. Stir sauce into ham and vegetable mixture then bring to a boil and cook for 1-2 minutes or until the sauce thickens.
  6. Serve hot over Rice.
