Pumpkin Spice Cookies with Maple Icing
Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp ground mace
  • 1 tsp ground all-spice
  • 1/2 cup butter room temperature
  • 2 cups brown sugar
  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1 egg
  • 1 tbsp vanilla extract
  • 3 Tbsp butter melted
  • 3 Tbsp Maple Syrup
  • 1/4 C milk
  • 2 C powdered sugar
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, mace, and all-spice; set aside.
  3. In a large bowl, cream butter and brown sugar.
  4. Mix in pumpkin, egg, and vanilla then beat until creamy.
  5. Slowly mix in dry ingredients.
  6. Drop the dough on cookie sheets by tablespoonfuls and then flatten slightly.
  7. Bake for 8-10 minutes then allow to completely cool.
  8. Mix together butter, maple syrup, milk and powdered sugar and mix until smooth.
  9. Drizzle Icing over cookies.
