French Lentil Stew with Sausage
  • 1 small shallot diced
  • 1 garlic clove minced
  • 2 large carrots peeled and diced
  • 1/2 cup of broccoli I used a food processor, finely chopped
  • 1/2 cup of mushrooms I used baby portobello your choice
  • 1 cup of sliced sausage
  • 2 cups vegetable broth or meat
  • 1 lb of steamed French lentils
  • salt & pepper to taste
  1. Saute the shallots and garlic until soft and translucent. Then add all the remaining ingredients and allow to simmer until carrots are cooked through. About 20 minutes or so.
  2. You can serve this as a stew. Or add more broth and turn it into a soup. I love serving this over rice or eating it with some sourdough bread. As an option thinly slice a radish to give it a little spiciness and crunch.
