Chocolate Zucchini Muffins
Servings: 24 Muffins
Ingredients
  • 2 large eggs
  • 1/2 C . applesauce
  • 1/4 C . sugar
  • 3/4 C . brown sugar
  • 2 C . zucchini shredded
  • 1 1/2 C . flour
  • 1/2 C . unsweetened cocoa powder
  • 2 tsp baking powder
  • 12 oz chocolate chips or mini chocolate chips
Instructions
  1. Preheat the oven to 400 degrees and spray two standard muffin tins with non-stick cooking spray or line with cupcake liners.

  2. Combine the eggs, applesauce, sugar, brown sugar and shredded zucchini.
  3. Slowly fold in the dry ingredients and the chocolate chips.
  4. Fill each muffin well about 3/4 full.
  5. Bake 17-20 minutes.
