Slow Cooker Pineapple Chicken

Ingredients
  • 1 cup pineapple juice;
  • 1/2 cup chicken broth
  • 1/4 cup brown sugar
  • 1/2 cup Ketchup
  • 2 tbsp apple cider vinegar
  • 3 tbsp light soy sauce
  • 3 cloves garlic minced
  • 1 can pineapple tidbits 14-ounce, with juice
  • 6 Boneless Skinless Chicken breasts, cubed
  • 3 tablespoons cornstarch
  • 1 red pepper diced
  • 1/2 tsp sesame seeds
Instructions
  1. In a 6-qt slow cooker, combine pineapple juice, chicken broth, brown sugar, ketchup, vinegar, soy sauce and garlic.
  2. Stir together until combined.
  3. Mix in chicken and pineapple with reserved juices.
  4. Cover and cook on low heat for 5-6 hours or high for 2-3 hours.
  5. In a small bowl, whisk together 1/4 cup water and cornstarch. Stir in mixture into the slow cooker. Place red pepper in the slow cooker.
  6. Cover and cook on high heat for an additional 30 minutes, or until sauce has thickened.
  7. Serve chicken immediately, garnished with sesame seeds.
