Watermelon. We all love it. It’s the fruit of summer picnics, barbecues and snack time.

Juicy, sweet, and delicious, it’s no wonder that Canadians buy over 300 million pounds of US watermelon every year. In fact, Canadians love watermelon so much that we are the American watermelon industry’s number one export market. 98% of all U.S.A. watermelon exports end up here!

Our short summer means we only have local Canadian watermelon available for a small time in August, so we have American farmers to thank for the delicious watermelon available in Canadian grocery stores from May all the way through to October.

There is nothing my kids love more after an afternoon of playing in the summer sun, than to bite into a wedge of refreshing watermelon. It is such a great way to keep them hydrated too since watermelon is 92% water. That isn’t all though, it really packs a healthy punch, with high levels of an antioxidant known as lycopene and an important amino acid called citrulline, plus it is low in calories and sodium, but high in potasium – all of which may improve heart health and offers a myriad of other health benefits.  It’s also a good source of Vitamin A, Vitamin B1, Vitamin B6, and Vitamin C. 

It’s such a healthy snack, but my kids don’t think about that – they just love the sweet taste!

I like to make my watermelon easy to access for the kids so they can grab a serving from the fridge whenever they want it. I just cut up the watermelon into sticks and fill up plastic sandiwch bags with them. That way they are ready to go for an easy snack whether we are at home or for grabbing and taking on the go.

I love buying watermelon for my family as it is one of the most economical fruits available. One watermelon can provide many servings of fruit.

I’ve heard a lot of myths about choosing the perfect watermelon. I often find other shoppers knocking on watermelon, pressing the stem in (this does work for cantaloupe!) and even trying to smell it.

What you should be doing is simply look the watermelon over. You are looking for a firm, symmetrical watermelon that is free from bruises, cuts or dents. Next you want to lift it up, the watermelon should be heavy for its size. Turn it over, the underside of the watermelon should have a creamy yellow spot from where it sat growing on the ground.

This almost always results in picking out a super sweet, juicy watermelon.  The kind you just can’t stop eating.

Watermelon is delicious as it is, there is no question about that. However watermelon is more versatile than you might think and pairs well with a variety of other food. 

Today I want to share with you an amazing dessert salsa featuring fresh watermelon and baked cinnamon tortilla chips. It is super easy to put together, but has an amazing and surprisingly complex flavour profile. It’s delicious and sweet enough for kids to enjoy, but sophisticated enough f0r adult palates.

Watermelon Salsa with Cinnamon Tortilla Chips

Ingredients

For Salsa:

1/2 Small-Medium Seedless Watermelon, finely chopped
2 Cups Strawberries, finely chopped
2 Tbsp Fresh mint leaves, finely chopped
1 Lime, juice of

For Cinnamon Tortilla Chips:

1 package Whole wheat tortillas, 10″
Butter
1/3 cup granulated sugar
1 tsp cinnamon

 

Directions

For Salsa:

Combine Salsa ingredients in  Large bowl.

*Optional: clean out 1/2 of the watermelon to use as a serving bowl and pour fruit mixture into the cleaned out “bowl” to serve.

Let stand for about 30 minutes at room temperature before serving, to allow flavours to blend.

 

For Cinnamon Tortilla Chips

Preheat oven to 350 degrees c.

Brush butter over one side of each tortilla.

Sprinkle lightly with cinnamon sugar.

Use a pizza cutter to divide each tortilla into wedge slices.

Place on a baking sheet and bake for 5 minutes, or until golden brown.

    I don’t think my kids would even bother using the chips to eat that salsa, they would just use a spoon. I’m going to try it, it looks great.

    I love watermelon and this does sound very good and refreshing, but wouldn’t the watermelon cause this salsa to go very watery, just a thought!

      Yeah it gets juicy, I just drain it off before serving. After that I don’t bother because it usually goes VERY quickly!
