Four Fruit Cobbler

Nothing is better than warming up the house in the cooler months with something tasty from the oven. Having teens I find dinner is done and they are still looking for more. So dessert has been a new addition to our family meals. This recipe, Four Fruit Cobbler fills them up and is easy to make. It can be changed up to add in any fruits you may want,  depending on the season and availability. We have replaced the Fall fruits with berries and served with ice cream before and it was fabulous.

Four Fruit Cobbler (Serves: 8)

 

Ingredients:

(For Filling)

¼ cup granulated sugar
2 tbsp. cornstarch
1 tsp. cinnamon
3 apples, cored and sliced
3 pears, cored and sliced
½ cup dried apricots, slivered
½ cup orange juice
½ cup water

(For Topping)

¾ cup all-purpose flour
2 tbsp. granulated sugar
¾ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
3 tbsp. margarine
½ cup plain yogurt
1 tsp. grated orange peel

 

Instructions:

 • Combine sugar, cornstarch and cinnamon. Toss with apples, pears, and apricots. Spoon into 2½-quart corningware or 9-inch square baking dish. You can also make individual servings in smaller containers. Pour orange juice and water over top. Bake at 400°F for 20 minutes.

 • Topping preparation. Mix flour, sugar, baking powder, baking soda and salt. Cut in margarine until mixture resembles coarse crumbs. Combine yogurt and orange peel. Stir into flour mixture, until moistened. Using a large spoon, drop into 8 mounds on top of spread out fruit. Bake for 20-25 minutes longer or until golden brown. Serve warm on its own or with ice cream. This also tastes yummy cool and next day if you are looking for a quick breakfast 🙂
