A stack of these bad boys would probably make for the best father’s day surprise ever.  Feel free to use your own favourite pancake recipe or mix.  I’ve included my pancake recipe for anyone who wants to do this from scratch.

Tips for the BEST Bacon Pancakes

  • Only mix your pancake batter until the ingredients are just combined. Over-mixing will lead with denser pancakes.
  • If you’re making pancakes for a crowd, keep them warm in a 200 degree oven. Place cooked pancakes on a baking sheet or oven safe dish, uncovered.
  • Top with real maple syrup! Yum.

How to Store Bacon Pancakes

Keep leftover bacon pancakes tightly wrapped in an airtight container in the fridge for up to 4 days.

You can also freeze pancakes on a parchment-lined baking sheet in a single layer. Store in an airtight container or freezer bag and freeze for up to 3 months.

Freezing them on the sheet pan first keeps them from sticking together when they freeze.

Reheat in the microwave in 30 second increments until warmed through. (No need to thaw out frozen pancakes.)

About the Ingredients for Bacon Pancakes

Bacon – Use your favourite type of bacon. Just make sure you cook it until it is just perfectly done.

Flour – Spoon and level the flour when measuring it, otherwise you’ll wind up with dense bread.

Sugar – Just use plain old granulated sugar. (Can also substitute with your favourite granulated sugar substitute or or brown sugar.)

Baking Powder – Leavens the bread, make sure it is still active so your quick bread rises.

Milk – Use whatever type of milk you have on hand. Don’t swap with water.

Butter – I like to use butter for pancakes as it adds more flavour but you can also use a neutral flavoured oil.

Egg – Room temperature egg is best.

How to Make Bacon Pancakes

Yields: 12 Pancakes | Prep Time: 5 Mins | Cook Time: 10 mins

Ingredients:

Bacon
1 cup all-purpose flour
2 tbsp sugar
2 tsp baking powder
1 cup milk
2 tbsp butter, melted
1 egg

Directions:

Fry Bacon in a pan to desired level of crispyness.

Pat grease off the bacon and set aside.

Meanwhile, In a large bowl, sift together the flour, baking powder, and sugar.

Make a well in the centre and pour in the milk, egg and butter; mix until smooth.

Add a couple pieces of Bacon back to your pan, over medium-high heat.

Poor a couple tablespoons full of batter over bacon, following the shape of the bacon.

Brown on both sides and serve hot with Maple Syrup.
