I love chicken. I really do.

There was a time in my life where I decided to be a vegetarian, except I was definitely one of those chicken eating vegetarians. That’s a thing, right?

My kids? If you ask them what their favourite food is they will generally say chicken and rice. Sometimes they will say Spaghetti and Meatballs (incidentally I make mine with ground chicken because it’s so lean but still tasty.) Now and then they will declare it’s pizza – with chicken and pineapple.

It seems like I’m not the only one in love with chicken – chicken is actually Canada’s #1 protein choice. Canadians eat so much chicken it would be impossible not to be thankful for all the hard work Canadian Chicken Farmers do. So now it is time to show Chicken Farmers of Canada just how much Canadians appreciate all their dedication to farming and Canadian consumers.

To celebrate I’ve collected 9 of my favourite chicken recipes to share with you  so that you can celebrate the very first National Chicken Month.

First up –  the classic pizza gets a makeover into a delicious family meal idea in this Margherita Penne with Chicken recipe. Speaking of families, did you know that over 90% of Canadian chicken farms are family owned and operated? This is because Canadian chicken farmers use a system called supply management to carefully match their production to meet consumer demand. Smart, eh?

 

 

This recipe for Baked Crispy Chicken with Provolone is an amazing twist on a classic recipe that kids and adults will both love! Oh my goodness! Liz, those recipes are making me drool! I love chicken in so many ways -- Chicken Souvlaki, Terriyaki Chicken, Chilaquiles con pollo y salsa verde, General Tso Chicken, chicken parm...need I go on? :) So good!
