Chocolate Cupcakes:

1 ¾ cups flour
2 cups sugar
1 cup cocoa
1 ½ tsp baking soda
1 ½ tsp baking powder
1 tsp salt
2 eggs
1 cup milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water

 

Orange Buttercream Frosting:

1 cup butter, softened
4 cups powdered sugar
4 tbsp whipping cream
1 tsp orange extract
Orange food colouring, optional
Grated chocolate for garnish, if desired

 

Cupcake Instructions:

Preheat oven to 350F. Line cupcake pan with cupcake liners. Set aside.

In a large bowl, mix together flour, sugar, cocoa, baking soda, baking powder and salt.

In another large bowl, stir together eggs, milk, oil and vanilla extract. Add the dry ingredients to the wet ingredients bowl and stir together.

Beat on medium speed for 2 to 3 minutes. Slowly add boiling water and continue to beat. The mixture will be a little runny.

Fill the cupcake liners with the batter about ¾ way full. Bake for 20 to 25 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.

Remove from oven and let cool in the pan for 10 minutes. Carefully transfer cupcakes to a wire baking rack to continue cool.

 

Frosting Instructions

In a mixing bowl, cream butter and powdered sugar on medium speed. Add in the whipping cream and continue to beat. Add in orange extract and orange food colouring (if using) and beat until fully incorporated.

Scoop frosting into a pastry bag with a large tip. Frost the cupcakes starting at the outside and working towards the center.

Makes 18 to 24 cupcakes.

I made these cupcakes today and they are so DELICIOUS! The cupcake part is moist and really chocolately plus the frosting is so light and creamy. I only had one stick of butter so I had to use a stick of margarine but it still was fantastic! Thank you so much for this recipe!

I made these cupcakes and they were a big hit! The cupcake itself is a little less sweet, so the combination is brilliant! I modified the icing though. Used one part butter and two parts icicing sugar with orange essence. Turned out excellent!

I made these tonight for my husband bday tomorow, these are is favorite. I added orange zest in the chocolate cupcake and didnt have orange extract so use grand marnier in the frosting, did a little drizzle of melted chocolate on top and added a piece of the orange chocolate, looks pretty good.

1. This makes a TON of cupcakes. I only needed about 12 and it made 40. 2. They are delicious but all my cupcakes came it flat and spread on the pan instead of domed. Any idea what I did wrong? I bake often and this is a first 3. The Orange frosting is to die for! I only added a tiny bit of coloring cause I try to limit food coloring most of the time so it was pale orange but it is AMAZING! Totally worth making a second batch for other frosting needs.

Overall 5/10 on the chocolate cupcakes 15/10 for the orange buttercream Thank you for sharing
