Pineapple Tamarind Beef Kabobs

Pineapple Tamarind Beef Kabobs

I love Kabobs, they are one of my favourite summer dishes.  Of course thanks to indoor grills you can enjoy them anytime of year and there is nothing like this recipe for Pineapple Tamarind Beef Kabobs to bring some sunshine into even the coldest and darkest of winter days thanks to their vibrant colours and tropical flavours.  It is also quick and easy to prepare thanks to Pulo Samal Island Pineapple Tamarind Marinade.

I know Tamarind, which has a sour flavour, from Jamaican cuisine,  and already had a good idea as to what the flavour of the marinade would be before even trying it.  It has a well-balance sweet and sour flavour that plays well off BBQ dishes that include a variety of flavours, such as in these Beef Kabobs.

Pineapple Tamarind Beef Kabobs

Ingredients:

  • 1 Cup Pulo Samal Island Pineapple Tamarind Marinade
  • 1 1/2 pounds beef top sirloin steak, cut into 1-inch pieces
  • 1 fresh pineapple, cut into 1-inch pieces
  • 24 large fresh mushrooms
  • 1 medium sweet red pepper, cut into 1-inch pieces
  • 1 medium sweet yellow pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces

 

Directions:

 

  1. Place Beef in a resealable plastic bag or glass baking dish and pour 3/4 cups of the pineapple tamarind marinade and turn to coat.  Allow to marinade for 1-4 hours.
  2. Grease and pre-heat the grill to medium-high.
  3. Thread beef and the rest of the ingredients onto metal or soaked wooden/bamboo skewers.
  4. Grill, covered, for 8-10 minutes or until meat reaches desired temperature, turning occasionally and basting with reserved marinade.

oh my, these look so scrumptious. I like sweet and sour but have never tried anything with tamarind in it (to my knowledge at least) but this sounds like I really would enjoy this recipe. :-)
