How to Store Pumpkin Cookies

Pumpkin Spice Cookies will stay moist if you store them in an airtight container, they can be kept in the fridge or on the counter for up to a week.

They need to be stored either in a single layer or with wax or parchment paper in between layers as the cookies are rather sticky.

Can Iced Pumpkin Cookies be Frozen??

Of course! Pumpkin Spice Cookies can be stored in an airtight container or freezer bag and kept in the freezer for up to 3 months with or without icing.

To freeze you will need to allow the cookies to cool completely. Because these cookies are so sticky, you will want to flash freeze them by placing them on a baking sheet in a single layer in the freezer for 2 hours.

Then transfer them to a freezer bag and store until ready to use.

When ready to enjoy leave the cookies at room temperature until thawed out. Enjoy.

About the Ingredients for Pumpkin Spice Cookies

Flour – Spoon and level your flour so the cookies stay light and airy.

Baking powder and soda – Make sure they are active so they leaven the cake properly.

Spices – Use an already prepared pumpkin pie spice mix or a combination of cinnamon, nutmeg, mace and all-spice.

Salt – Balances out all the flavours.

Butter – Room temperature butter so you can cream it easily. You should use unsalted butter but unless i am testing a recipe, I always use salted since that is what we have on hand, and never had an issue. Just reduce the added salt by half.

Brown Sugar – light or brown sugar is fine. You can also substitute with golden monkfruit sweetener if you want a good sugar-free alternative.

Pumpkin – Make sure you use pumpkin purée and not pumpkin pie filling. That said I have accidentally used pie filling and it was fine.

Egg – Your egg should be room temperature.

Vanilla – Real vanilla will give the best flavour but artificial vanilla is perfectly fine.

Pumpkin Spice Cookies with Maple Icing

Yields: 3 Dozen Cookies | Prep time: 10 Mins | Cook time: 12 Mins

Ingredients:

2 1/2 cups all-purpose flour
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground mace
1 tsp ground all-spice
1/2 tsp Salt
1/2 cup unsalted butter, room temperature
2 cups brown sugar
1 cup canned pumpkin puree (not pumpkin pie filling)
1 egg
1 tbsp vanilla extract

For the Maple Icing

3 Tbsp butter, melted
3 Tbsp Maple Syrup
1/4 C milk
2 C powdered sugar

Directions:

Preheat oven to 350 degrees F.

In a medium bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, mace, and all-spice; set aside the flour mixture.

In a large bowl, cream  butter and brown sugar.

Mix in pumpkin, egg, and vanilla then beat until creamy.

Slowly mix in dry ingredients, being careful not to over-mix.

Drop the dough on cookie sheets by tablespoonfuls and then flatten slightly.

Bake for 12 minutes, the bottoms will be golden brown when they are done. Allow to cool for 10 minutes on the cookie sheet then transfer to a wire rack.

Mix together butter, maple syrup, milk and powdered sugar and mix until smooth.

Drizzle Icing over cooled cookies.
