Nando’s Restaurants first opened in South Africa in 1987 and soon became famous for its Portuguese style flame-grilled chicken flavoured with their PERi-PERi (African Birds Eye Chilli) sauce. 

The distinctive flavour of Nando’s sauces comes from the traditional Portuguese recipe based on lemons, fresh herbs, garlic and PERi-PERi.

There is a range of sauces, marinades, salad dressings, rubs and snacks available.   Nando’s PERi-PERi sauces have no artificial additives, or added colours, preservatives or MSG. 

You can find Nando’s in your local supermarket, if you can’t find it there, you can get a bottle from your local Nando’s restaurant.

We were sent a package of Nando’s sauces to try out, and they were an instant hit!

I especially loved the medium PERi-PERi sauce for use in cooking.  It has a wonderful depth of flavour with a nice touch of heat. 

I found the hint of tang in the sauce to be absolutely addictive. 

There are so many ways these sauces can be used, but my favourite way so far is to marinade the chicken in the sauce with a little extra lemon juice and then grill it.

Chicken breasts can be so hard to cook, often they come out bland and boring but that is not the case when cooked with Nando’s!

What is Peri Peri Chicken?

Peri peri or piri piri chicken, is chicken cooked in a chili based sauce that originated in South Africa and was imported to Portugal.

It is tangy and spicy, traditionally made with African birds eye chilies (peri peri), lemon and other spices.

Ingredients for Peri Peri Chicken

Chicken Breasts – You can use any cut of chicken for this recipe, from drumsticks to a whole chicken. Just adjust cooking times accordingly.

Lemon – Adds a little more tang to the dish.

Peri Peri Sauce – I use Nando’s pre-made peri peri sauce because its quick and easy and I don’t need to deal with any hot peppers myself. Feel free to make homade peri peri sauce though if you desire.

Bell Peppers – I use a mix of yellow and red bell peppers. The sweetness of them roasted is perfect with the tangy heat of the marinade.

Onion – Who doesn’t love roasted onion? Use any kind of onion you like. Yellow, red, or even shallots.

Olive Oil – So your veggies roast nicely.

Salt & Pepper – Because you should season your food, of course.

How to Pan Fry Peri Peri Chicken Breasts

If pan frying your peri peri chicken, then butterfly the chicken breasts by cutting it roughly in half most of the way through. This will give you more flavour, and help you avoid dry chicken.

Heat up your pan over medium-high heat then add a 1tbsp of oil before placing the marinaded chicken in the pan. Cook about 3-4 minutes per side.

After removing the chicken from the pan, add a little more oil to the pan then the peppers and onion. Saute until the onions soften. Alternatively you could roast the vegetables separately int he oven.

How to Grill Peri Peri Chicken Breasts

Peri Peri chicken tastes best when grilled, in my opinion. When grilling, keep the breasts full so they do not dry out.

Preheat your grill to 400°F, Place chicken directly on the grates and close the lid. Grill on each side for about 7-9 minutes or until cooked through.

Roast your veggies in foil on the grill with oil, salt and pepper.

Easy Peri Peri Chicken Breasts

Ingredients:

  • 4-6 Chicken Breasts
  • 1/2 Lemon
  • Nando’s Peri Peri Sauce
  • 4 Sweet Bell Peppers,
  • 1 medium onion
  • 1 tbsp Olive Oil
  • Salt & Pepper

Directions:

Place your chicken into a marinading dish or sealable plastic bag, and squeeze the juice of half a lemon over them.

Pour a generous amount of Nando’s Peri Peri sauce over the chicken, reserving a little.

Allow to marinade for at least 30 mins, but preferably overnight.

Preheat oven to 350 F Celcius.

Cut your bell peppers and onion into large chunks and place into the bottom of an oven safe dish. Toss with olive oil, salt and pepper.

Place the chicken breasts on top of the vegetables, and discard any excess marinade.

Bake in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165º F in the thickness part. Cooking time will depend on the size of the chicken breasts.

Half-way through cooking, brush the chicken with some of the remaining peri-peri marinade.

Remove from oven and allow to rest for 10 minutes before serving with the roasted vegetables.

Note: If you want your chicken browned a little, put it under the broiler for 2 minutes at the end.

Reading this has made me miss living in the city. Picking up a fresh roasted Portuguese chicken for the family....every weekend. Just can't find that where we are located now. Will definitely have to find some Nando's to cook at home.
